1 ½ cups Semolina flour 1 ½ cups white whole wheat flour
1 teaspoon fine-grain sea salt
1 cup cold water
½ cup Santa Barbara Extra Virgin Olive Oil
arrow  Instructions
Whisk together salt and flours. Add the water and Extra Virgin Olive Oil. Use a dough hook, and mix dough at medium speed for 5 minutes. Add additional water or flour to insure that the mixture is not sticky.

Shape the dough into a large ball. Now cut it into 12 equal pieces. Gently rub each piece with the olive oil, shape into a small ball and place on a plate. Cover with a clean dishtowel or plastic wrap and let rest at room temperature for about 20 -60 minutes.

While the dough is resting, preheat your oven to 450 degrees, F. Insert a pizza stone if you have one.

When the dough is done resting, flatten one dough ball. Using a rolling pin or a pasta machine, shape into a flat strip of dough. You can cut the dough into any shape you like at this point. Set dough on floured pizza stone or cooking sheet. Drizzle with Extra Virgin Olive Oil. Bake 10-15 minutes.
